Sweet red wine ideal for vampire slaying or ritual sacrafice. Cherry cola Dr. P. kind of flavor profile. Bred at the Weinsberg wine school dumkopf (insert joke here).
This wine is produced from the Bischofsberg and Kirchenpfad vineyards. The grapes are picked early to maintain the playful, refreshing acidity of Pinot Noir and avoid excessive alcohol. After fermentation in stainless steel tanks, the base wine is aged in the neutral 225L barrels to enhance texture and add body. The final sparkling wine is obtained by the Charmat method in special 2,000L tanks under controlled conditions.
Harvested by hand from the Kirchenpfad vineyard. Fermented with skin contact for 12 days. Maceration lasts an additional 2-3 days to get all the fruit flavors from the grapes. The finished wine is stored in used oak barrels for 12 months. During this time the wine is clarified three times by gentle racking. This wine is unfiltered.
